The trick is to smoke the meat and not make the meat smoke

SUMMARY My grilling arsenal consists of three models. The first is a 6 burner gas grill purchased in 2003. The gas grill is what got me interested in learning how to be more than a weekend warrior just grilling from Memorial Day to Labor Day. My second grill originally was a horizontal offset smoker purchased in 2005. The smoker was my first smoker and is what got me started on serious barbecue. Both of these served me well. In 2012 these two were joined by a Large Big Green Egg, a ceramic Kamado cooker. I was originally thinking the Egg would take over some of the duties of the other two grills & in doing so would extend their lives. It turns out the Egg can do an equal or better job and is serving to replace them. The first Large Big Green Egg was purchased in August. I ordered a second Large in late Dctember which has replaced the smoker.
